Salsa – Aji Recipe
4 cups diced tomatoes
1 cup chopped cilantro
1 cup chopped red peppers
1 cup diced white onion
4 green chilli peppers, diced
or 4 jalapenos, diced
4 tablespoons vinegar
2 tablespoons lemon juice
1/2 teaspoon salt
In a bowl, combine all ingredients. Mix it with cooked shrimp and chill. Serve it with corn tortillas.
